The brass tava was in Indian kitchens before cast iron arrived. Before non-stick was invented. Before stainless steel became the default. It was the flat cooking surface on which every flatbread in the household was made, every morning, for generations.

Brass holds heat. What that means for a tava.

A thin stainless steel tava heats and cools quickly. When you place a cold roti on it, the surface temperature drops and the bread steams rather than sears. A brass tava holds its heat when the cold dough hits the surface. The temperature recovers faster. The roti gets direct heat from the first second of contact. This is why rotis made on a brass or cast iron tava brown differently from those made on a thin steel pan. The surface stays hot. The bread responds to that heat immediately. After the flame goes off, the brass tava stays warm for minutes. The last roti cooks in retained heat, not residual flame.

The cooking surface of the Flamorra Brass Tava is tin-coated. Tin is food-safe and does not react with dough, oil, or any ingredient used in flatbread cooking. The exterior of the tava is plain brass. Over daily use, the tin on the cooking surface gradually thins. When you see the brass beginning to show through, take the tava to a kalaikar for re-tinning. The process is quick and very low cost. The tava comes back with a fresh tin surface and continues. This is the maintenance cycle that kept brass cookware in Indian kitchens for generations before disposability became the norm.

The Flamorra Brass Tava is heavy by design. 18 gauge brass is substantially heavier than a thin-pressed steel tava. The weight keeps the surface flat on the burner and prevents the tava from sliding or lifting at one edge. It also contributes to the heat retention. Every mark on the exterior is from the craftsman's hammer. The surface is not perfectly smooth. It is not meant to be. The variations in the exterior surface are the result of hand-shaping, not a defect to be polished away. This is what a hand-made brass tava looks like. It has looked this way for centuries.
