Brass is an alloy of copper and zinc. When food and liquid sit in brass vessels, trace amounts of copper and zinc leach into them. Both minerals are essential for human health. Ayurveda has recommended eating from brass for thousands of years specifically for these benefits. The quantities involved are trace levels, not medicinal doses. The thali is plain brass on both sides. Dry foods, flatbreads, and most cooked dishes sit on brass without any reaction. The katoris, glass, and spoon are tin-lined on all food-contact surfaces. Dal, curd, buttermilk, rasam, and any sour or liquid dish sit in tin, not bare brass. Tin is food-safe and non-reactive. It does not affect the taste of food. It prevents brass's natural reactivity with acidic ingredients. The tin lining wears over years of daily use. When it does, take the pieces to a kalaikar for re-tinning. The brass beneath the tin is unaffected and the pieces continue for another generation.
